In our mission to bring together young Tel Aviv community and honor Shabbat in the most beautifully cool & kosher way possible, we are trying something new. We have partnered with the Carlton Hotel on the beach to host intimate stylish private dinners, centered on great people, great food, and highlighting boutique wineries with insights during the meal from winemakers & sommeliers. This month we are fortunate to be highlighting unique Spanish varietals from Valencia that are rarely available in kosher wines.

About Our Wine:
Memorias del Rambam by Viña Memorias
We are a Spanish boutique kosher winery 70km inland from the coast of Valencia. We are run in a traditional family manner, with an excellent background producing high quality grapes. Our old vineyards are located in the prestigious “Land of Bobal” micro-climate that has been producing wine for the last 2,700 years. We are passionate about preserving our heritage and rewriting the modern wine story of our region. We are devoted to our indigenous grapes. The work starts from the ground, with our strict rain fed calcareous clay soils at altitudes of 850 meters. The vines are free standing bushes “goblet trained” where some of the plots have vies over 65 years old. The grapes are exclusively selected from the vineyards and picked by hand. The green pruning of the vines is one of the most important tasks from our wines’ maintenance and excellence. Once selected, we continue to examine the grapes in our laboratory, where we identify and select our top quality grapes for our wines. The yield of our vineyards is medium/low with an average of 40 hectoliters per hectare. Thanks to our unique and extreme terroir conditions we benefit from being pesticides free. Diego Morcillo has recently been awarded the 2018 “Best Winemaker in Spain”.
The Bobal variety is the star of the D.O.P. Utiel-Requena region where it originates from. The grape produces deep and elegant aromas on the nose, and intense red violaceous color remains in the time even after aging in oak barrels. It fills the glasses with powerful ripe hints of velvet dark fruit fragrances such as cherries, raspberries, strawberries and peach, with good acidity with chewy tannins and moderate levels of alcohol. Among its main features we can find a high concentration of flavonoids and resveratrol, considered as one of the most healthy beneficial components in wine.
The Macabeo variety, also known as Viura, is a native Spanish grape of the Ebro Basin which according to experts finds its highest expression in the D.O.P. Utiel-Requena region, between the breeze of the Mediterranean fresh sunny climate and the continental dry climate from La Mancha. Naturally abundant glycerine, makes fresh crispy dry wines with beautiful fruits. The wine is distinguished by its delicate straw yellow color and its elegant bouquet releasing green apple, citrus and tropical fruit aromas. Great balanced acidity, long and persistent on the palate.
