The restaurant Han Manuli in Jaffa was established by couple Felix Rosenthal and Chen Rozhenik in a building with a long-standing history. The structure was built in the time of the Ottoman Empire to serve as a sort of hostel, a “Han”, where travellers could stop in Jaffa on their pilgrimage to Jerusalem. The Han was constructed by an Armenian man named Manuli, hence the naming of the restaurant.
Felix, despite his young age of 31, has had extensive experience working with restaurants like Cucina Tamar, Charcuterie, Yoezer – Shaul Evron’s Wine Bar, St. John in London, and a very impressive role working alongside Eyal Shani at the luxurious HaSalon restaurant.
Although he came to Israel from the Ukraine, Rosenthal’s personal mission was to create the best plate of Hummus in the world, and indeed, in light of that aspiration the “Han Manuli” was established. That being said, the restaurant’s menu includes much more than Hummus. Meals like green peppers stuffed with sardines, pickled sardines, bulgur salad on yogurt, octopus salad with potatoes, figs stuffed with smoked wheat and herbs, zucchinis stuffed with fresh seafood, and other exciting seasonal dishes.
“I want to serve what they are selling at the market that day. If for example, they are selling calamari and sardines, I’ll print them up on my menu for that day, if not, than I won’t. The D.N.A of my food is to always work with the freshest raw material, and create everything from scratch, into something whole.”
You can try to define Han Manuli as a Mediterranean restaurant, but you could also not define it, and just come try it out yourself.
